Are we not all looking for the quick and easy meal? One that satisfies all cravings, fills you and and yet doesn't take forever to make? This greek salad mason jar salad recipe with chickpeas is your answer. Best yet- it totally can pre-made in a mason jar so you can grab it on the go all week.
WHAT ARE MASON JAR SALADS?
Mason jar salads are salads layered in a glass jar. Typically several are at once so you can grab them when you are on the go during the week. I'm going to show you all the tips and tricks so, no matter what your ingredients are you will succeed!
HOW DO YOU MAKE A MASON JAR SALAD?!

FIRST. Start with your dressing.
This greek salad dressing is a delicious lemon vinaigrette!
In a small bowl combine lemon, olive oil, salt and other ingredients. whisk together.
HOW DO I LAYER MASON JAR SALADS?
As shown, you want to start with your dressing. (for this recipe it is the lemon vinaigrette) Then you want to layer your hardest veggies or beans next, moving up to your soft veggies to your leafy greens! This will help avoid anything from getting "soggy" from the dressing.
With this mason jar greek salad with chickpeas start with the chickpeas.
Are chickpeas also garbanzo beans?
YES! I rarely can find a can of beans that are actually labeled chickpeas, don't stress, look for garbanzo beans. If you need another substitute bean, you can try great northern beans (a white bean) they won't have the same texture, they will be softer- but will have a mild taste to them.
LAYER:
DRESSING (lemonvinaigrette)
BEANS(chickpeas)
VEGGIES(cherry tomatoes, cucumbers, red onion, olives)
CHEESE(feta)
GREENS(parsley... some spinach wouldalso be amazing too!)
WHAT IS THE BEST LID FOR MASON JAR SALADS?
While you can use the metal lid they come with they are NOT recommended for reuse. They dont seal properly, and become rusty with washes and use. I LOVE LOVE these plastic reusable white lids. The come in both wide mouth and regular. You can wash them 100 times and keep using them. You can grab them for a great price here on amazon or pick them up at walmart.
Now that your salad is done store it until ready to eat in the refrigerator!
How long do mason jar salads last?
They last 6-7 days in your refrigerator.
How do you eat mason jar salads?
Because the mason jar salads are layered they are not meant to be eaten out of the jar. Dump the contents onto a plate or bowl. The dressing will cover the ingredients and you'll be ready to devour it all!

Mason Jar Greek Salad with Chickpeas
Spicing up a Greek salad with chickpeas is always a good idea. This tasty, greens-free salad is perfect when you’re tired of eating leafy greens but still want to keep lunch healthy. You can’t go wrong with feta cheese and olives, and the chickpeas help curb your appetite while providing your body with zinc and protein. This salad is filling and satisfying without being a huge portion. I think you’ll love it!

Salad
- 2 tablespoons Lemon Vinaigrette
- ½ cup chickpeas rinsed and drained
- ⅓ cup halved cherry tomatoes
- ⅓ cup quartered cucumber slices
- 2 tablespoons diced red onion
- 2 tablespoons pitted black olives halved
- 2 ounces crumbled feta cheese
- 2 tablespoons chopped fresh parsley
- 1 pint-size Mason jar
Lemon Vinaigrette
- 2 tablespoons lemon juice
- pinch of salt
- freshly ground black pepper to taste
- 3 tablespoons olive oil
Instructions
Salad
Place the vinaigrette in the Mason jar and add the chickpeas. Next add layers of cherry tomatoes, cucumber, onion, olives, feta cheese, and parsley. Seal and refrigerate until you’re ready to eat the salad.
Lemon Vinaigrette
Whisk together the lemon juice, salt, and pepper. Slowly add the olive oil, whisking, until the dressing thickens.
